Pasta
Ingredients How to do it plastic free
375g Dried Spaghetti Pasta Barilla Brand is just cardboard – can buy at Woolworths
2 tablespoons olive oil Buy in bulk from Community Foods or The Source
1 teaspoon of caster sugar CSR comes in paper at Woolworths
2 garlic cloves Buy from your local fruit and veg market: Rusty’s, Johnsons, Smithfield fruit and veg. Take your own bag for collection

Grow basil in the garden J

400g tomatoes
2 tablespoons of fresh basil
1 small red onion, halved, thinly sliced
Cooking Instructions
Step 1 Cook pasta in a large saucepan of boiling salted water, following packet directions until tender. Drain.
Step 2 Meanwhile, heat oil in a large, deep frying pan over medium heat. Add onion. Cook for 3 minutes or until softened. Add garlic. Cook for 1 minute or until fragrant. Add tomatoes and sugar. Bring to a simmer. Cook, stirring occasionally, for 5 minutes or until slightly thickened.
Step 3 Add basil and pasta to tomato mixture. Season with salt and pepper. Toss to combine. Serve.

 

Ratatouille
Ingredients How to do it plastic free
3 -4 Tbsp Olive oil or more Buy in bulk from the Source or Community Foods
2 garlic, cloves chopped or sliced

1 onion slices
1 big eggplant cut in big pieces
2 zucchinis cut in big pieces
I green capsicum (optional), deseeded and cut in big pieces
4 tomatoes cut in big pieces
Cooking Instructions
Step 1 Add the eggplant, stir for few minutes. Add the zucchinis, stir for few minutes. Add the capsicum, stir for few minutes. Add the tomatoes, stir for few minutes.
Step 2 Reduce the heat and cover cook for at least 30 minutes checking that it doesn’t stick. Add more olive oil if it looks dry.

Cook longer if you want it mushier or more tasty

Good with fried eggs or omelettes, in a wrap, with pasta or plain rice…

 

Spinach and Feta Quiche
Ingredients How to do it plastic free
Finely chopped Spinach leaves Loose leaves from your local fruit and veg
150g Feta Cheese (Diced) Take a wax wrap or metal container to the Woolworths deli (or any deli!) If they refuse to put in your wrap, ask for it just in paper and transfer later
5 eggs No plastic here
Plain Flour Found in paper at Woolworths, or buy in bulk from a bulk food store
Salt and pepper Buy in bulk from the Source or Community Foods
1 Leek (diced) Buy from your local fruit and veg market: Rusty’s, Johnsons, Smithfield fruit and veg. Take your own bag for collection
2 cloves Garlic (finely diced)
½ brown onion (diced)
Oil Buy in bulk from the Source or Community Foods
Cooking Instructions
Step 1 Preheat oven to 180oC.

Combine flour and water and knead until you have dough. Roll dough into the shape of your baking dish.

Step 2 Oil pan and lightly flour so the base does not stick. Put in the base in the baking dish for 5 min to harden.
Step 3 While pastry hardens, fry leek, garlic and onion in oil until soft. Then combine in a mixing bowl with eggs, spinach and cheese
Step 4 Poor mixing bowl into the pastry and return to oven. Bake for 20 – 30 min or golden brown on top.

 

Delicious Zucchini Salad
Ingredients How to do it plastic free

Salt and pepper Buy in bulk from the Source or Community Foods
Pine nuts (sprinkle) Buy in bulk (The Source)
1 Zucchini Buy from your local fruit and veg market: Rusty’s, Johnsons, Smithfield fruit and veg. Take your own bag for collection
30g Feta Cheese (Diced) Take a wax wrap or metal container to the Woolworths deli (or any deli!) If they refuse to put in your wrap, ask for it just in paper and transfer later
Iceberg lettuce Buy from your local fruit and veg market: Rusty’s, Johnsons, Smithfield fruit and veg. Take your own bag for collection
5 Mushrooms
½ red capsicum
½ brown onion (diced)
Cooking Instructions
Step 1 Chop all the veggies
Step 2 Fry onion, zucchini and mushrooms in a pan with salt, pepper and oil.
Step 3 Put the fried vegetable on a bed of chopped lettuce and zucchini and sprinkle with pine nuts and fetta cheese
