Grow basil in the garden J |
400g tomatoes | |
2 tablespoons of fresh basil | |
1 small red onion, halved, thinly sliced | |
Cooking Instructions | |
Step 1 | Cook pasta in a large saucepan of boiling salted water, following packet directions until tender. Drain. |
Step 2 | Meanwhile, heat oil in a large, deep frying pan over medium heat. Add onion. Cook for 3 minutes or until softened. Add garlic. Cook for 1 minute or until fragrant. Add tomatoes and sugar. Bring to a simmer. Cook, stirring occasionally, for 5 minutes or until slightly thickened. |
Step 3 | Add basil and pasta to tomato mixture. Season with salt and pepper. Toss to combine. Serve. |
Ratatouille | ||

Cooking Instructions | ||
Step 1 | Add the eggplant, stir for few minutes. Add the zucchinis, stir for few minutes. Add the capsicum, stir for few minutes. Add the tomatoes, stir for few minutes. | |
Step 2 | Reduce the heat and cover cook for at least 30 minutes checking that it doesn’t stick. Add more olive oil if it looks dry.

Spinach and Feta Quiche | |

150g Feta Cheese (Diced) | Take a wax wrap or metal container to the Woolworths deli (or any deli!) If they refuse to put in your wrap, ask for it just in paper and transfer later |

Cooking Instructions | |
Step 1 | Preheat oven to 180oC.
Combine flour and water and knead until you have dough. Roll dough into the shape of your baking dish. |
Step 2 | Oil pan and lightly flour so the base does not stick. Put in the base in the baking dish for 5 min to harden. |
Step 3 | While pastry hardens, fry leek, garlic and onion in oil until soft. Then combine in a mixing bowl with eggs, spinach and cheese |
Step 4 | Poor mixing bowl into the pastry and return to oven. Bake for 20 – 30 min or golden brown on top. |

Cooking Instructions | |
Step 1 | Chop all the veggies |
Step 2 | Fry onion, zucchini and mushrooms in a pan with salt, pepper and oil. |
Step 3 | Put the fried vegetable on a bed of chopped lettuce and zucchini and sprinkle with pine nuts and fetta cheese |
